Five Spice Duck Salad

A quick and easy but absolute goodie for a healthy lunch with the girls! – with thanks to the lovely jubbly Jamie Oliver.

This dish is awesome with our small batch whites  –  Fiano, Viognier or Vermentino –an extra bonus if eaten on a bright sunshiney day.

Ingredients-Serves 2

1 x large duck breast

1 x tsp Chinese five spice powder

1 x pomegranate, halved

3 x spring onions, trimmed and sliced

a sprig of fresh coriander

a few sprigs of watercress

½  ripe mango, peeled and cut into chunks

Juice of ½ lime

Sesame oil, to drizzle

1 little gem lettuce

Combine all ingredients and there you have it – easy!
