Oliver’s Taranga cooking series
This month’s cooking series recipe is fennel, orange and rocket salad with pine nut and citrus dressing.
This fresh and juicy salad is prefect for alfresco dining during the hot summer months. Accompanied with our effervescent Moscato you are set for an afternoon in the sun.
The 2021 Moscato is a great option for a lower alcohol wine – or try one of our ‘Sunburst cocktails’.

Fennel & Orange Salad
Ingredients
2 small fennel bulbs
2 large oranges
1/4 cup of pine nuts
160g of rocket
1 tbs white balsamic vinegar
1 Lemon, zest & juiced
2 tbs Olive Oil
Method
- Pan fry pine nuts in a dry pan until lightly browned, set aside
- Finely slice fennel and oranges
- For the dressing, add the lemon zest, juice, white balsamic vinegar and olive oil, set aside
- Assemble salad rocket first the top with fennel, orange, pine nuts and dressing, picking a few fennel leaves for a garnish
