Tacos & Vermentino

Tacos are such a fantastic way to brighten your week, especially alongside our light, fresh and crisp Vermentino

This recipe is based on the classic Mexican Carne Asada, an easy, flavourful and tender steak dish that feels like such a treat! Served on some fluffy tortillas, and covered in pico de gallo full of fresh, ripe ingredients, and you have a match made in heaven, and on a weeknight 🙂

We love a taco or two with a glass of our Vermentino, because the flavours just seem to naturally go hand in hand, plus we might just love tacos and vermentino, but hey…

INGREDIENTS

For the Carne Asada

  • 500-700g flank or skirt steak
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 2 tbsp vinegar – white or apple cider
  • 1/4 cup fresh coriander, finely chopped
  • salt and black pepper, to taste
  • 1–2 tbsp olive oil (for grilling)

For the Pico De Gallo

  • 3 ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh coriander, chopped
  • Juice of 1 lime
  • Salt, to taste
  • Optional: 1 avocado, diced

To serve

  • Warm flour or corn tortillas

METHOD

  • Marinate the Steak – In a bowl, combine orange juice, lime juice, minced garlic, vinegar, chopped coriander, salt, and pepper. Place the steak in the marinade and refrigerate for at least 2 hours (overnight for extra flavour).
  • Prepare the Pico de Gallo – In a medium bowl, mix diced tomatoes, red onion, coriander, lime juice, and salt. Add diced avocado if desired. Set aside.
  • BBQ or Grill the Steak – Preheat your grill or barbecue to high heat. Using olive oil, grill the steak for 3–5 minutes per side (depending on thickness) until nicely charred but still pink and juicy inside.
  • Rest and Slice – Remove the steak from the grill and let it rest for 5–10 minutes. Slice thinly against the grain, or cubed if preferred.
  • Assemble the Tacos – Warm your tortillas, then top with sliced steak and spoonfulls of pico de gallo.

And there you have it, tasty, flavourful, fresh tacos… All you need now is a glass of our Vermentino and dinner is served!
