A little hot weather, and the Oliver’s team start hankering for something a little more Gin focussed after work…

So to beat the heat we have pulled together a mix of our favourite easy, indulgent and flavourful Cocktails for Summer, that make the absolute most of the Oliver’s Taranga Quince Gin, so that you can join us for a refreshing glass of something fun, including a few frozen additions to chill you right down…

‘Chica’ Rosé & Gin Spritz

Make the most of summer fruits like strawberries and rhubarb with this Gin cocktail, not to mention a generous splash of our ‘Chica’ Mencia Rosé. Alongside some tasty pink grapefruit juice, and lots of ice, this is just so refreshing!

Great in a jug too, so invite those friends around. Just be sure to make the Rhubarb Syrup the day before so that it’s ready when you need it. This was the crowd favourite for the OT team…

Serves 6

  1. DAY BEFORE – Mix 150ml water, Rhubarb Stalks and 150g caster sugar in a saucepan and simmer until sugar dissolves. Then pop in a container in the fridge overnight to let the flavours infuse.
  2. ON THE DAY – Add Gin, Rosé, pink grapefruit juice and rhubarb syrup (take stalks out) to a bottle and chill right down (3 hours). When ready to serve, add lots of ice and the Gin mixture to some nice cold glasses, and top with some soda water, strawberries and mint.

Passionfruit, Orange & Thyme Gin Cocktail

That tart, tangy hit of fresh passionfruit, and freshly squeezed orange juice brings amazing tropical flavours to this easy Gin cocktail. So impressive too – just the ticket if you have friends coming round, or to treat yourself!

Serves 2

  1. Halve the passionfruit and strain through a fine sieve into a small jug. Add juice and a few of the passionfruit seeds. Add gin, bitters, orange juice and thyme to jug. Stir to combine.
  2. Fill two cold glasses with plenty of ice, then add Gin mix and a fresh slice of Orange and some of the thyme to garnish.

Summer Sunrise Gin Cocktail

Taking its lead from the famous Tequila Sunrise, this Sunrise Gin Cocktail makes the most of the bright colours of grenadine and fresh orange juice. And if you have a more practiced hand than us, technically you can even layer the colours for maximum tropical effect… Then garnish with a twist of orange peel to feel fancy!

Serves 2

  • 50ml Oliver’s Taranga Quince Gin
  • 20 ml grenadine
  • 10ml freshly squeezed lemon juice
  • 200 ml freshly squeezed orange juice
  • Ice (to serve)
  • Orange slice, or twisted rind (to garnish)
  1. Pour the grenadine into a chilled high-ball glass
  2. Add the gin and lemon juice, then slowly pour in the orange juice
  3. Add plenty of ice to your glass
  4. Top with orange rind or an orange slice and serve

Frozen Rockmelon, Lemon & Gin Cocktail

So smoothies aren’t just for breakfast, this tasty frozen Gin cocktail makes the most of ripe rockmelon, and freshly squeezed lemon juice to create the ultimate Summer drink! Just get started the day before so the rockmelon is nice and frozen and the syrup is ready before you start.

Serves 4

  1. DAY BEFORE – Chop rockmelon into pieces and pop in the freezer overnight
  2. DAY BEFORE – Mix 70ml water, lemon rind and 70g caster sugar in a saucepan and simmer until sugar dissolves. Then pop in a container in the fridge overnight to let the flavours infuse.
  3. ON THE DAY – Blend Gin, freshly squeezed lemon juice, and syrup (take rind out) with the frozen rockmelon in a blender. Blend until completely smooth, then serve immediately in nice cold glasses.

Blood Orange Gin Float

When we found out this particular cocktail included a scoop of Blood Orange Sorbet, the entire team were immediately on board, who could resist a grown up Spider? A little tricky to make it look pretty, but the flavours are great!

Serves 2

  • 50ml Oliver’s Taranga Quince Gin
  • 1 scoop of blood orange sorbet per glass
  • 20ml freshly squeezed lemon juice
  • Fresh rosemary
  • Tonic Water or Soda Water per preference
  1. Add one scoop of blood orange sorbet to chilled glass
  2. Add Gin and freshly squeezed lemon juice
  3. Top with Tonic or Soda water as preferred
  4. Use rosemary to stir together and leave in as a garnish

And don’t fogret our classic Sunburst Cocktail marrying the sweet orange, cardamon, pepper and distinctive juniper character from our Quince Gin with the rose petals, orange blossom and honeydew of our Moscato to make for a summery cocktail designed to impress.

Per Serve

  1. Add ice to a chilled wine glass
  2. Measure 50ml of Gin and pour into the glass
  3. Top up the glass with cold Moscato
  4. Top with a slice or two of dried citrus
  5. Add a little mint for extra fresh flavour
