This long weekend has the OT team ‘fired up’ for a gourmet campfire meal, and we’ve pulled together a few tasty recipes to tempt you to join us…
Camping food isn’t always something to look forward to, depending on the weather, the company, and the soggy contents at the bottom of the esky, it can be a mixed bag. But with a bit of forward planning, you can make a campfire meal something to really look forward to.
To prove it, we decided to whip up a gourmet campfire meal to show you a few easy ways to get it done…
Slow cooked Beef Bourgignon
When it comes to campfire meals, what could be more exciting than a slow cooked stew lazily cooking away over the coals?
We were inspired by a Beef Bourgignon recipe we’ve used before to go with our Brioni’s Blend. Though for this one, we decided to do more of a one pot version to not overcomplicate things, taking things in and out of the pot. Though we highly recommend adding the mushrooms close to the end, so they don’t get too soggy.
Watching this stew bubble away with the all the juicy flavours, and sweet smell of wine had all the campers getting very impatient for our late lunch, that’s for sure!
Not to mention anticipating the old fashioned delights of the alfoil wrapped roast potatoes cooking alongside it. Some things just take you straight back to those childhood memories!
Fancy Campfire Bruschetta
While the camp oven was stewing away, it was important to keep everyone’s bellies from grumbling, and this fancy campfire bruschetta was quick to do, and tasty to boot.
Using a cast iron frypan, we placed a whole block of feta with some fresh thyme on the grill. Then to up the ante, we drizzled it with local honey to bubble away for a deliciously sticky combination of flavours.
Then we added some thick cut slices of sourdough with some of our 1839 Extra Virgin Olive Oil on top to quickly toast on the side. And to add a delicious extra element, we sliced up some thin slices of zucchini, a great complement to the feta and charcoal edged toast.
Then we put it all together, spreading honey glazed feta over the toast, topped with the grilled zucchini, and a masterstroke of thinly sliced prosciutto… soooo good! And the perfect match to both the Fiano and Chica Rosé.
Roast Potatoes for the win
And after demolishing the bruschetta, the campers were ready for the main course, so we peeled back the alfoil to reveal fluffy, steaming, crispy potatoes.
We cut eat each potato in half, and spooned over the bubbling Beef Bourgignon, and a little extra fresh thyme, to make a truly delicious meal!
Sure, it took a little extra effort, but gosh it was worth it. You certainly don’t need to break the bank to have a great meal, and don’t think that just because you’re going camping you can’t bring the good stuff. A great glass of wine by the fire can transform the whole camping experience!
Cheese Platter to bring it home
And if your guests could still demolish a little extra after all of that, then make some room in the esky for some really great cheese, this is always a winner.
Also perfect with a glass of red like our Grenache, or really treat your guests with something to warm them right through, like our Banished Fortified Grenache, such a good way to end a meal.
