Isn’t it amazing how many of your happy childhood memories can be wrapped up in the warm embrace of a favourite cake? For the Oliver kids, their Gran Marjorie was the comforting source of a long list of delicious cakes, slices, and biscuits.
One of the favourites amongst that list was her classic Apricot Roly-Poly. In fact, as soon as Corrina mentions it, you can tell that she can still taste it, even after all these years. So how could we not recreate this classic recipe for all our Oliver’s Taranga family to try for themselves?

Comfort food, here we come…
Corrina, Brioni, Sam and the OT Team
Recipe (Serves 4-6pp)
Ingredients: Cake
- 1 1/2 cups of Self-Raising Flour
- Pinch of Salt
- 3/4 teaspoon of Unsalted Butter
- Splash of milk to form dough
- 6 Apricots, sliced into small pieces
Ingredients: Syrup
- 1/2 cup of Sugar
- Knob of butter
- 1 cup water
Method:
- Warm the oven to 180 degrees
- Mix self-raising flour, salt, butter and milk to form a dough.
- Roll-out the dough
- Slice apricots into small chunks
- Distribute apricots evenly across the dough
- Gently roll the dough
- Place on a baking sheet
- Warm the cup of water on the stovetop, and mix in the knob of butter and sugar to make the syrup
- Pour the syrup over the Roly-Poly before placing in the oven
- Place in the oven for 30-40mins
- Remove from the oven and slice
- Top with more apricots and pouring cream, or ice-cream, to serve
