Gran Oliver knew just how to bring a smile to people’s faces with her food, and this comfort dish is exactly that, that classic childhood flavour of golden syrup mixed with the chewy, light as air dumplings. Perfect with a some great quality vanilla ice-cream, and your favourite people of course.

Gran’s Golden Syrup Dumplings (Serves 4)
DUMPLINGS
1 Cup self-raising flour
1 1/2 dessert spoons of corn flour
A pinch of salt
1 tablespoon of butter
1 egg
Splash of milk
SYRUP
1 1/2 cups of water
1/2 cup sugar
1 tablespoon of butter
1 tablespoon of golden syrup
Vanilla ice-cream to serve
- Combine 1 cup of self-raising flour, 1 1/2 dessert spoons of corn flour, a pinch of salt, 1 tablespoon of butter with a well beaten egg and a little milk.
- Rub butter into flour, mix well with egg and milk, like scones. Make into six balls.
- To make syrup, combine 1 1/2 cups of water, 1/2 cup sugar, 1 tablespoon of butter and 1 tablespoon of golden syrup. Bring to a boil.
- Drop the dumplings into syrup and boil for 20 minutes without raising the lid.
- Plate 3 balls per person, and serve with vanilla ice-cream.
