Corrina even remembers helping to make the pastry back in the day, including the possible inclusion of dripping in the recipe, which made the pastry lovely and savoury against the lemony sweetness 😋

It’s the perfect excuse to invite your friends round for a cheeky glass of wine in the garden, or a refreshing way to finish a great meal with the family. Nothing too complicated here, just great flavours, and crumbly goodness.

Gran’s Lemon Delicious Tart

PASTRY
1 cup self-raising flour
1/2 cup caster sugar
60g butter
1 egg

FILLING
1/4 cup lemon juice
60g butter
1/2 cup caster sugar
1 egg

PASTRY

  1. Combine 1 cup of self-raising flour and 1/2 cup caster sugar and mix
  2. Add 60g butter and rub together
  3. Add 1 egg, combine into dough and chill for 30mins
  4. Separate 2/3 dough and press it into a fluted tart tin

FILLING

  1. Combine 1/4 cup lemon juice, 60g chopped butter and 1/2 cup caster sugar in a saucepan to melt
  2. Once cooled, stir in 1 egg
  3. Pour filling mixture into baking dish and crumble remaining 1/3 pastry into mixture
  4. Bake for 20-25 mins
  5. Top with icing sugar and a handful of ripe blueberries or raspberries for decoration
